Tomatoes:

Being the key ingredient of the recipe, these must necessarily be good, ripe and juicy!

Anchovies:

This key, non-traditional ingredient adds a wonderful, deep natural flavor to the simplicity of the sauce. In fact, it gives the sauce “that little something extra” that it lacks to be delicious! If you don’t have one, use one of the following substitutes:

  • The first and best alternative is: 1/2 teaspoon of fish sauce and a pinch of salt;
  • Another option is: 1/4 tablespoon of Worcestershire sauce and a pinch of salt.

Fresh herbs:

These are for freshness, flavor, and color! Parsley, chives, and tarragon are a lovely combination to add interest to our recipe. If you don’t have any, basil leaves and chervil work too!

Olives:

Cover your toast with virgin sauce and that’s it!

What is the traditional recipe for virgin sauce?

Ingredients

  • 5 and a half tablespoons of extra virgin olive oil;
  • 2 tablespoons lemon juice;
  • 2 tomatoes, seeded and cut into very small cubes;
  • 12 black olives, pitted and cut into strips;
  • 2 anchovy fillets, very finely chopped;
  • 1/2 teaspoon garlic, very finely chopped;
  • 1 teaspoon finely chopped parsley;
  • 1/2 teaspoon finely chopped chives;
  • 1/2 teaspoon finely chopped tarragon leaves;
  • 1/4 teaspoon black pepper.

Steps to follow

  1. Mix the ingredients in a bowl;
  2. Taste and add more salt if needed!
  3. Let the virgin sauce rest in the refrigerator for 20 minutes to allow the flavors to blend.

Consume this sauce immediately after preparation. You can also eat it the next day as long as you store it in an airtight container in the refrigerator.
