Thanks to their unique taste, French fries are loved all over the world. This is despite all the warnings that emphasize the high amounts of calories and fat. It’s hard to resist the temptation to devour a serving from time to time! Well, if it’s just occasionally, that’s not bad. But while we’re at it, as far as preparation is concerned, it would be stupid to waste your guilty pleasure! To make your French fries perfect, tender on the inside and crispy on the outside, the following tip will surprise you.

Rule of thumb:   First of all, you should know that the best French fries are those that have been heat-treated twice. In the first phase, they should be fried at a low temperature (medium cooking), then they are removed and placed on a paper towel to absorb the excess oil. Once they have cooled, move on to the second cooking phase: dip the fries back into the very hot oil to make them crispy.

Here is the preparation method:

  1. First, clean and wash the potatoes.
  2. Next, and this is an essential phase, you need to carefully slice them. The best way is to use a mandolin or a slicer for a perfect cut. If you don’t have one, use a sharp knife to cut medium slices no more than 1 inch thick. Then, each slice is cut into sticks.
  3. Place the chips in a bowl of cold water. Leave them there for 20 minutes to remove excess starch. Then remove them and dry them with a clean cloth.
  4. Then, pour a generous layer of oil into the pan. Heat it and add the potato sticks.
  5. Leave them like this for about 5 minutes, until the fries are golden. Don’t hesitate to add a few cloves of garlic, it will give them an even tastier flavour!
  6. Remove them from the pan, place them on absorbent paper and let them cool slowly, before putting them back in the hot oil. Just a few minutes will be enough. Look for them and you will visually notice the well-balanced browning (be careful not to let them blacken!). Once they are ready, remove them and place them back on absorbent paper to remove the excess oil. Your fries will be tender on the inside and crispy on the outside.

What oil to use for crispy fries?

Peanut oil or any other light vegetable oil will be ideal for making the best homemade fries. This will give you that crispy crust that you sometimes lack.

NB:   It is generally better to use peanut oil rather than olive oil due to its high smoke point.
