  • 250 g carrots
  • 100 g of potatoes
  • 30 g butter
  • 50 g of parmesan
  • 2 eggs. Separate the whites from the yolks.
  • 1 pinch of nutmeg
  • 1 pinch of salt

Instructions: step by step

  1. Peel the carrots and potatoes and cut them into cubes;
  2. Boil the vegetables for 10 minutes in a saucepan filled with water. Once cooked, strain the contents. You can also cook them in the microwave for 5 minutes;
  3. In a blender, add the vegetables, parmesan, melted butter, salt, grated nutmeg and 2 egg yolks. Set the egg whites aside;
  4. Mix everything and pour the mixture into a glass container;

  2. Mix gently with a wooden spoon;
  3. Divide your preparation into buttered and floured molds;

  • 4 carrots
  • 2 leeks
  • 2 eggs
  • 20 cl of fresh cream

  • 1 pinch of pepper
  • 1 pinch of salt
  • 1 pinch grated nutmeg

Steps

  1. Finely chop the carrots and leeks;
  2. Brown them in a saucepan over low heat with butter;
  3. Add water and your vegetable broth cube;
  4. Let it simmer until the water evaporates. This will allow your vegetables to cook better;
  5. Meanwhile, beat the eggs with the crème fraîche in a bowl. Add salt, pepper and grated nutmeg. Don’t add too much salt, as the vegetables will already be salty with the broth. Then add a little grated cheese. Set aside the rest for later;
