Ingredients

This baked potato recipe   requires minimal ingredients. Here’s what you need:

  • 4 reddish potatoes
  • Olive oil
  • coarse salt
  • Pepper
  • Garlic and rosemary (optional)

Now that you know the ingredients, we’ll explain why and how, because you’re probably wondering:

  • In fact, you can bake any type of potato, but for a satisfactory result we suggest using  Russet type potatoes  . They are thick and this is precisely what gives them that crunchy side after cooking them in the oven. In addition, being rich in starch, it makes them soft on the inside.
  • Although butter adds flavour, crunch and allows the skin of the potato to become even more golden, many of us have chosen not to use it anymore. If this is the case for you, we suggest using  regular olive oil  (not extra virgin olive oil!)
  • Coarse salt gives   a crunchy touch to your “chips” and that is what we all look for, right?
  • As for  garlic and rosemary  , it’s up to you! If you want to enhance the flavor of your potatoes, these two ingredients can be useful.

  1. To  get crispy potato skins  quickly, your oven needs to be hot. So preheat it to 230°C.
  2. Wash the potatoes by rubbing them with water and then dry them.
  3. To season, coat them completely with olive oil using your hands or a kitchen brush.
  4. Then sprinkle with salt and pepper to taste.
  5. Take a fork and prick the potatoes in several places before placing them in the oven.

  1. Our tip for a successful baked potato recipe is to halve the cooking time! For the  first cooking  , cook for  25 minutes  , until the skin starts to dry out and slightly wrinkle. (You can place the potatoes directly on the oven rack or on a baking tray after covering them with good quality baking paper.)
  2. Space your potatoes a few inches apart so they don’t stick together.
  3. Second stage of cooking.  Turn the potatoes over (add garlic and rosemary if you want to add flavor). Cook for  20 more minutes  .
  4. Put on oven mitts and then lightly press the potatoes to test for doneness. (If they yield under pressure, remove them.) If not,  return them to the oven for 5 more minutes  .
  5. Using a knife, cut them lengthwise, then shred and flake the insides with a fork.

  1. Finally, all you have to do is add your favorite spices or seasonings. Your dish is ready to be served!
