Apple flan: ingredients for 6 people

- 3 golden apples
- 180 g of powdered sugar
- 100 g cornstarch
- 1 liter of whole milk
- 1 sachet of vanilla sugar
- 1 puff pastry or shortcrust pastry
- Apricot jelly and water to cover
Apple flan: preparation
1- Preheat the oven to 190-200°C, then take a saucepan and pour 0.75 litres of milk into it, along with the icing sugar and vanilla sugar. Stir everything together and place the saucepan on the heat until it boils.


2- Dilute the cornstarch in 1/4 liter of milk, mixing well with a spoon.

3- Peel the apples and cut them into pieces, then into thin slices, discarding the seeds.

4- Pour the milk and cornstarch mixture into the saucepan with the rest of the ingredients and stir until a thick cream forms.

5- Place your puff pastry in a mould and prick it all over with a fork. According to chef Raymond Blanc, this will stabilise the base for optimal cooking of your flan!
6- Then pour your cream over the puff pastry.


7- Then place apple slices on your flan

8- Sprinkle with sugar and cinnamon powder.

9- Let your flan cool and then put it in the oven for about forty minutes.

10- Prepare a topping by diluting the apricot jelly in water and spreading it over the apple slices with a brush. Your flan will look brighter and more appetizing.
