How to Make Citrus Cheese

To prepare our delicious   citrus cheese    we need:   2 liters of milk   ,   two lemons   , an   orange   and   1 teaspoon of salt. Let’s start by    pouring   two liters of milk   into a   saucepan and  bringing it to a boil .

While the   milk   is heating, we take   two lemons   . Remove the   peels   and put them aside   .  Then squeeze   the lemons in a   juicer  . Now pour the   lemon juice   into a   bowl   and filter it through a   sieve   . Let’s move on to the   orange   : remove the   peel   and keep   it  , remove the   peel   from the segments and   cut them   into small pieces.

Now let’s go back to the   milk   and add a   teaspoon of salt  . Then add the  lemon juice   and   the chopped orange  .   Leave for   5 minutes , at the end we will have sour milk   . At this point we can   take the pan off the heat   and pour the   curd   into a   mold  .

As   a mold,  you can use a small   sieve covered with a cloth    . This way, we can  pour  the cheese onto the cloth in the sieve and   place a bowl   underneath so that the  whey    produced   by the cheese can be filtered   and   drained into the bowl    . After that,   we cover   the   cheese   with the cloth and place   a weight   , such as a   pot  , on top.

We leave the   cheese  to rest for   at least   an hour    and then put it   in the fridge for two hours   . At the end we will have a delicious   citrus cheese that also serves as a  ricotta and orange dessert   .

Prepare a citrus herbal tea from the peels

This   recipe   does not generate any   waste . You can also use   the   orange   and lemon peels  that you reserved  beforehand   . We will   use them to make a citrus-flavored herbal tea   .
