Do you like fruity and original jams? Discover this recipe for mandarin jam, perfect for breakfast or to enhance your pastries. Follow the instructions for a sweet, slightly sour result without bitterness!
Ingredients (for about 2 pots):
- 1.5 kg thick tangerines (thick peel)
- 1 teaspoon baking powder
- 700 g sugar
- 1 glass of lemon or tangerine juice (225 ml)
- 1 Zimtstange (optional)
- 1 teaspoon butter (to reduce foam)
- Juice of one lime (to adjust the consistency)
Preparation steps :
1. Preparation of the bark
- Wash the tangerines with water and baking soda (1 teaspoon) for 30 minutes to remove impurities.
- Carefully remove the white skin from the inside and outside of the shell. Rinse thoroughly.
- Boil the peels in a pot of water for 5 minutes, discard the water and repeat the process a second time to remove the bitterness.
2. Cooking the bark
- Place the shells in a pot, cover with water and bring to the boil.
- Add half of the sugar (350 g) and the mandarin/lemon juice. Mix and leave to stand for 5 minutes.
- Cook uncovered over medium heat for 25 minutes , skimming off the foam regularly. Add butter to reduce foaming.
3. Finish the jam
- Add the remaining sugar (350 g) and the cinnamon and cook for a further 20 minutes , stirring with a hand blender until smooth.
- Check the consistency: if it is too runny, add the lime juice and cook for another 5 minutes . Remove the cinnamon at the end of the cooking time.
4. Potting
- Pour the hot jam into sterilized jars , close tightly with new lids and then turn the jars upside down until they have cooled completely. This will ensure optimal storage (up to 2 years in a cool place).
5th tasting
- Once cooled, open a jar and enjoy this jam on toast, in cakes or with cream cheese. A real treat with aromas of citrus fruits and cinnamon!
