Not many people make  cheese at home  , often for  fear  that it will take too long  or  be  complicated  . With the  recipe  we will see today, however, in a few  hours  and with just  a few euros  you can enjoy a  fresh  and  natural citrus cheese   . To prepare it we only need  oranges, lemons and milk  .

Why make cheese at home with an orange in boiling milk?

Making  cheese at home  is useful for several  reasons  . Firstly, it allows you to have a   fresh and  high-quality product  , since you can   personally  control each stage  of  production  , from the  choice of milk  to the  ripening  . The result is a   healthier and more  natural product  than  industrially  produced  cheeses  .

How to make citrus cheese

To  make  our tasty  citrus cheese  , we will need:  2 liters of milk  ,  two lemons  , one  orange  and  1 teaspoon of salt. Let’s start by pouring   two liters of milk  into a  saucepan  and bringing it to a  boil  .

While the milk is heating   , take  two lemons  . Remove the  peels  and set them  aside  , then  squeeze  the lemons in a  citrus juicer  . At this point, pour the  lemon juice  into a  bowl  , filtering it through a  sieve  . Moving on to the  orange  : remove the  peel  and set it aside  ,  remove the  zest  from the segments and  cut them  into small pieces.

Now back to the  milk  , add a  teaspoon of salt  . Then add the  lemon juice  and the  chopped orange  . Let it sit for  5 minutes  , and at the end you will have  curdled milk  . At this point you can  remove the saucepan from the heat  and pour the  curdled milk  into a  mould  .

As  a mould  you could consider using a  small strainer  covered with a  cloth  . This way we can  pour the cheese  onto the cloth inside the  strainer, and add  a bowl  underneath so that the  whey  that will produce the  cheese  can  filter  and  drain  into the  bowl  . Then  we cover  the  cheese  with the cloth and add  a weight  , for example a  jar  .

We leave the  cheese  under charge  for at least  one hour  , then we can put it  in the refrigerator for 2 hours  . At the end we will obtain a tasty  citrus cheese  to also serve as a  ricotta and orange dessert  .

Prepare a citrus herb infusion with the peels.

This  recipe  is a must-have  .  We can also  use the  orange and  lemon peels  that we previously  reserved  . We will use them to  prepare  an  infusion of aromatic citrus herbs.  To do this,  we cut  the  peels of the citrus fruits  that we have reserved into small pieces, place them in a  teapot  and add  boiling water  . Then, we let everything infuse for  a few  minutes.  And thus we will obtain a  tasty and fragrant infusion  to drink in  moments of relaxation.
