Special for children: recipes for those who do not like vegetables

To get your kids to eat vegetables, nothing could be simpler than this simple recipe for vegetable balls! According to Evelyne Debourg, canteen chef and recipe book author, the best way to make them appreciate vegetables is to choose microgreens like in this recipe. Present your vegetables in a fun way and your kids will ask for more! We don’t forget to choose organic vegetables for our little ones, if possible…

Ingredients

  • 200 g carrots
  • 70 g of potatoes
  • 2 tablespoons of parmesan
  • 2 tablespoons of breadcrumbs
  • 2 eggs
  • Rosemary
  • 40 g of scamarza
  • Salt
  • Flour and breadcrumbs for coating

Preparation and cooking

  1. After cleaning and peeling the carrots, we put them to boil with the potatoes in a saucepan;
  2. When all the vegetables are cooked, drain them and put them in a bowl;
  3. Next, take a fork and mash all the vegetables well… You can also use a potato masher;
  4. Next, add 1 egg, breadcrumbs, parmesan, salt and rosemary to the vegetable puree;
  5. Mix everything until you obtain a very homogeneous consistency but not too soft to form a ball;
  6. Finally, we form balls as we want!
  7. Oh! Don’t forget to coat them in flour and beaten egg, then in breadcrumbs;
  8. Now all that’s left to do is fry everything! Nothing could be simpler!
  9. We put the vegetable balls in the oil to fry until they are golden brown;
  10. If you can’t stand frying in oil or are looking for a healthier alternative, bake them at 180°C for about 25 minutes.

Cauliflower pizza recipe

Cauliflower crust pizza

Ingredients

  • 400 g raw cauliflower
  • 100 g of yogurt
  • 1 egg
  • 1 teaspoon of Provencal herbs
  • Salt

Preparation and cooking

  1. Preheat the oven to 200°C.
  2. We take the cauliflower, cut it into small pieces, put it in a blender;
  3. We put the obtained paste on a clean cloth to extract all the moisture; this step is important to make pizza dough.
  4. Then, when the cauliflower is completely dry, place it in a blender and add the yogurt, egg and Provencal herbs to the preparation.
  5. We turn on the mixer and mix until we obtain a slightly lumpy dough.
  6. All that’s left to do is lovingly roll out the dough onto a baking tray lined with parchment paper.
  7. We bake for 30 minutes and we have our pizza dough!

For your information

To decorate the pizza dough, cover it with homemade tomato sauce, accompanied by some red onions, olive oil and any vegetables you like. Put the pizza in the oven for 5 minutes until it is golden and crispy! And there you have it! You now have your vegetable pizza!

Extra tips  : Children are often reluctant to eat vegetables like cauliflower. Roast it instead of just steaming it. Choose spices and place it on a baking tray with salt, pepper, olive oil, soy sauce and smoked paprika and your children will forget they are eating a vegetable.

If you tend to hide your peas in gratins, learn to cook them by mixing them with different varieties of vegetables, and they will be just as good! The idea is to get children to try different recipes and rediscover vegetables. Be careful to introduce certain old or new vegetables such as parsnips or bananas.

Are you tired of always fighting with your children when preparing vegetables? Don’t hesitate to innovate and offer them more original recipes, ones they are not used to eating. They will have a varied diet and will be healthy! Give them colorful dishes with different vegetables in different shapes.
