Chinese rice recipe for 4 people 

Ingredients

  • 4 cups cooked rice
  • 1 chicken breast, diced (optional)
  • 1 cup fresh skinless shrimp (optional)
  • 1 beef or pork tenderloin, diced (optional)
  • 2 eggs
  • 1 medium carrot
  • 1 stalk of celery
  • 2 or 3 spring onions
  • a handful of peas
  • 1 cup bean sprouts
  • 1 medium onion
  • 1 piece of ginger, approximately 3 centimeters
  • 3 tablespoons of lard or vegetable oil
  • Salt or soy sauce 2 tablespoons thick soy sauce (optional)

Before moving on to preparing Chinese rice, you must first prepare and cook each of the ingredients before assembling them.

white rice

To start you need   refrigerated white rice   , which we recommend you prepare the day before.

How to do it?

  1. Place a saucepan over high heat, add the rice, water (1 part rice to 2 parts water) and salt.
  2. Cook for 5 minutes, until the water evaporates.
  3. Then reduce the heat to low, cover the pan and cook for a quarter of an hour. If you notice that the rice is not cooked to your liking, continue cooking for 5 more minutes.
  4. After cooking, immediately place the rice in the refrigerator (note that it will only keep in the refrigerator for one day; after this time, it will dry out).

  • To successfully cook your rice, you must respect certain conditions:
  • Choose a non-stick pan.
  • Adjust the cooking heat so that it is not too high.
  • Respect the water-rice ratio: 1 cup of rice to 2 cups of water.

Fat or vegetable oil

After preparing the rice, you need to obtain fat. Use lard, as it gives more flavor to the rice. If you don’t have any, replace it with vegetable oil.

Meat: beef, pork, chicken or shrimp 

When it comes to protein, you have plenty of options to choose from; you can opt for chicken, shrimp, beef, pork, turkey, calamari, ham.

Cut the meat into medium-sized cubes. For the shrimp, simply cut them in half.

Vegetables

Carrots, celery, onions, bean sprouts… You can use any vegetables you have in the fridge (finely chopped into small pieces).

If you have   fresh ginger  , that would be ideal. This will add aroma and a spicy touch to your rice.

Eggs 

Prepare   some scrambled eggs or a small omelette   which you will then cut into small, finely chopped pieces and then add to your rice.

Now that everything is ready, it’s time to assemble your dish.

  1. Use a wok or large, deep skillet. 
  2. Place your utensil over high heat.
  3. As soon as the bottom starts to smoke, add the oil and sauté the meats or shrimp for about 4 minutes.
  4. Once finished, set your proteins aside on a separate plate.
  5. Add another tablespoon of oil to your wok. Cook the ginger carefully first, as it is sensitive to heat and could burn quickly.
  6. Then add the carrot, celery, bean sprouts, chives and peas.
  7. Add a touch of salt and soy sauce.
  8. Finally, add the previously cooked egg and then the meats.
  9. Be careful to mix everything well.
  10. Remove your wok from the heat and, if desired, add the sliced ​​onions.
  11. Remove the rice from the refrigerator   and add thick soy sauce to give it color and give it more aroma and flavor.
